Tangy baobab-dressed salad

Serves up to 6 as a side dish. Preparation time 25 mins


1 red and 1 yellow bell pepper chopped into small cubes
2 baby cucumbers, de-seeded and chopped into small cubes
12 cherry tomatoes (de-seeded and roughly chopped)


5g baobab fruit powder
30ml cold pressed rapeseed oil
40ml water
1tbsp runny honey
1 tbsp lemon juice
A pinch of salt


Place all the chopped salad ingredients into a non-metallic bowl and mix gently together. Mix all the dressing ingredients thoroughly together in a non-metallic bowl. (Tip: place all the ingredients into an empty glass jar, secure lid and shake vigorously until all the ingredients are combined to a smooth consistency).

Leave dressing to chill in the fridge for at least 10 mins. When ready to serve, pour some or all the dressing over the chopped salad pieces, mix and serve. TIP: this dressing used as a great dressing on other salads or over fish.
