Spicy grilled cod & salad

Serves 2. Preparation time 20 mins, cooking time 5 – 7mins


For the cod:

350 – 400g cod fillet (scaled, pin-boned and cut into 2)
a few good twists of Bim’s Kitchen African Pepper Spice Mill
1 tbsp extra virgin olive oil
2 generous pinches of salt

For the salad dressing:

50ml extra virgin olive oil
30ml lemon juice
a few good twists of Bim’s Kitchen African Pepper Spice Mill
a pinch of salt
2 pinches of demerara sugar

Salad: prepare your own favourite salad ingredients. Pictured here with some some boiled potatoes, baby leaf salad, baby plum tomatoes, peppers and cucumber.


Prepare the salad dressing first by thoroughly mixing all the ingredients together (Tip: pour all the ingredients to a clean jam jar, cover and shake vigorously) and refrigerate for at least 10mins before serving.

Preheat an oven grill. Sprinkle a bit of salt on both sides of the cod pieces. Grind a good few twists of the Pepper Spice Mill on the flesh side of the cod followed by a drizzle of extra virgin olive oil. Leave to sit for 5 mins. Lightly brush a grill tray with a few drops of extra virgin olive oil and place under a moderate grill for about 30 seconds. Place the cod pieces on the heated tray, skin side down and grill for 5 – 7 mins depending on how thick the cod is, until cooked.

Serve the cod with some salad drizzled with the prepared dressing.
