Serves up to 8 as a side. Preparation 10mins, cooking time approx 1 hour 10 mins
1 400g tin of cooked butter beans
1 400g tin of cooked borlotti beans
1 400g tin of chopped tomatoes
1 small onion (finely chopped)
1 small clove of garlic (finely chopped)
200ml of Bim’s Kitchen Spicy African BBQ Sauce
1 tsp demerara sugar
20ml sunflower oil
Add the sunflower oil to a deep pan then add the onion and garlic and gently fry over a low heat for about 10mins. Add the tomatoes, BBQ Sauce and sugar, stir and continue cooking covered on a low heat for 30 mins stirring occasionally. Add the beans, stir and continue cooking covered on a low heat for a further 40 mins, uncovered for the last 5mins.
Serve hot as a side dish or enjoy on some buttered toast or in a baked potato.
