Special tigernut & egg stir-fried rice

(Serves up to 4. Preparation time 10 mins, cooking time: 10 mins)


  • 800g cold cooked white rice
  • 4 large eggs (beaten)
  • 1 large pepper ( thinly sliced)
  • 150g parboiled mixed vegetables
  • 4 tbsp Bim’s Kitchen Tomato & Tigernut Relish
  • 3 tbsp sunflower oil
  • 2 tbsp tomato puree
  • 4 tbsp soy sauce
  • 2 generous pinches of salt


Heat the oil over a gentle heat. Add the tomato puree and stir continuously for about a minute until the puree turns a darker shade of red, thickens and starts to split. Add soy sauce, stir and then add the Tomato & Tigernut Relish and salt and continue stirring for about a minute. Raise heat slightly and then add the peppers and mixed vegetables and stir. Add the beaten egg and then the rice. Continue stir-frying for a further 3 minutes and then serve while hot.
