Serves 1 or 2 as a side. Preparation time 5 mins, cooking time 3 mins

Ingredients

80g savoy cabbage (thinly sliced)
40g leeks (thinly sliced)
10ml sunflower oil
30ml/3tbsp of a Bim’s Kitchen African Baobab BBQ Sauce (hot or not)
10ml water
salt to taste

Method

Mix the Baobab BBQ Sauce and water together. Heat the oil in a wok over a gentle heat then add the BBQ Sauce mix and stir continuously for about a minute until the sauce begins to bubble. Raise the heat and then add the cabbage and leeks. Stir-fry for about a minute and a half (add a touch of water if the vegetables look a bit too dry).  Check for salt and serve while hot with your desired accompaniments (shown here with some plain white rice and a fried egg). TIP: you can vary the ratio of cabbage to leeks to your own taste or just use 120g of one if you prefer.
