Serves 2 as a light meal. Preparation time 5 mins, cooking time 5 mins

Ingredients

200g cold cooked white rice
80g savoy cabbage (thinly sliced)
40g leeks (thinly sliced)
20ml sunflower oil
60ml/6tbsp of a Bimís Kitchen African Baobab BBQ Sauce (hot or not)
2 eggs
20ml water
salt to taste

Method

Mix the Baobab BBQ Sauce and water together. Heat the oil in a wok over a gentle heat then add the BBQ Sauce mix and stir continuously for about a minute until the sauce begins to bubble. Raise the heat and then add the cabbage and leeks. Stir-fry for about a minute until they begin to soften (add a touch of water if the vegetables look a bit too dry).

Add the rice and continue stir-frying for a further 2 mins. Break the eggs into the rice, and continue stir-frying for a minute or so until the egg has set to your desired consistency. Check for salt and serve while while hot. (TIP: you can vary the ratio of cabbage to leeks to your own taste or just use 120g of one if you prefer.)
