Penne with tomato & tigernut meat sauce

Serves 4. Preparation time 10 minutes. Cooking time 20 minutes.



Boil water in a large pot and cook the penne whilst chopping the vegetables and making the meat sauce. This dish is best with the pasta cooked al dente.

Dice the carrot, celery and onion.

Drizzle some olive oil into a large frying pan and heat until hot. On medium-high heat, sauté the carrots, celery and onions until softened.

Add the beef mince and continue frying until the meat is cooked and no longer pink.

Stir in the tomato sauce and Bim’s Kitchen African Tomato & Tigernut Relish. The entire jar is recommended for maximum flavour. However, the amount of relish added to the meat sauce can be adjusted to taste.

Keep stirring the tomato sauce and relish so the flavours blend with the mince and vegetables. Cook until the meat sauce is heated through.

Keep stirring the meat sauce on medium heat until it is time to drain the pasta. Remove the frying pan from heat. Add the drained penne to the frying pan and stir into the sauce.

Transfer the penne into serving plates. Serve immediately.
