(serves 2. Preparation time 20 mins, cooking time: 20 mins + marinating time).
- a 800g – 1kg whole tilapia (scaled, gutted, trimmed and slashed on each side)
- 100ml Bim’s Kitchen African Lemon, Garlic & Pepper Sauce
- 30ml sunflower or rapeseed oil
- a few good pinches of salt
Mix the lemon, garlic & pepper sauce, oil and salt together. In a non-metallic dish, coat the tilapia thoroughly with the marinade including within the slashes on the fish. Leave to marinate in the fridge for at least an hour (the longer the better).
Preheat the oven to 200ºC. Cut a piece of heavy foil and place the marinated fish in the middle and seal the foil all round. Place on a baking tray and then in the middle of the heated oven. Roast for 20 mins. Remove the fish from the oven and carefully open the pouch. Fish should be white and flake easily when cooked through.
Serve with your chosen accompaniments (shown here with a mixed bean, cucumber, pepper, spinach and tomato salad).
TIP: The fish can also be cooked on a barbeque grill either with or without the foil. If cooked without the foil, use a fish grill basket over moderate coals and turn frequently to avoid burning.
