Ingredients

4 fresh mackerel fillets
sea salt

For the marinade

40ml Bim’s Kitchen African Lemon, Garlic & Pepper Sauce
40ml water
20ml extra virgin olive oil
a good pinch of salt.

Method

Mix all the marinade ingredients together thoroughly and set aside. Turn the fillets skin side up and lightly salt. Turn the fillets over and gently spoon the marinade all over the flesh of the mackerel fillets and set aside for at least 10 mins. While the fillets are marinating, pre-heat an oven grill, lightly brush a suitable baking tray with a bit of olive oil and place under the grill (place the tray around the middle of the oven). When ready to grill the fish, remove the now hot baking tray and carefully place the marinated fillets, skin-side down, on to the tray and immediately return to the oven. Grill until the fillets are cooked through. Serve with a salad (we used a mixture of spinach, rocket, red & ruby chard and some cherry tomatoes).
