- 8 pork loin steaks (approx. 125g each)
- 15g from Bim’s Kitchen African Pepper Spice Mill (coarsely ground)
- 40ml water
- 10ml sunflower oil
- 10g salt
Grind out 15g of the Pepper Spice Mill (or weigh out and grind in a coffee mill) and mix with the sunflower oil, water and salt to form a marinade. Pour marinade over the steaks, coat thoroughly and leave to marinate in the fridge for at least 1 hour (the longer the better).
Remove marinated steaks from the fridge at least 30 mins before cooking and preheat an oven grill with a grilling tray in a middle shelf. When ready to cook, remove the heated grilling rack from the oven and place the steaks on it leaving space between them. Return the tray to the middle of the oven and grill the steaks for 10 – 12 mins on each side when the steaks should be thoroughly cooked through.

TIP: the marinated steaks are also perfect for cooking on an outdoor BBQ.
