- 100g shredded/chopped cooked chicken
- 1 tsp Bim’s Kitchen African Chilli Coconut Relish
- 1 tbsp plain mayonnaise
- some finely chopped flat-leaf parsley
- a baguette/bread roll
Optional accompaniments: salad ingredients of your choice
Mix the chicken, mayonnaise and chopped parsley together and serve in a baguette or bread roll and serve with a salad (shown here in a lightly buttered wholemeal baguette with iceberg lettuce and peppers and cherry tomatoes).
TIP: this is a very tasty use for leftover roast chicken or turkey.
