Creamy chilli coconut chicken

Per person. Preparation time 10 min.


  • 100g shredded/chopped cooked chicken
  • 1 tsp Bim’s Kitchen African Chilli Coconut Relish
  • 1 tbsp plain mayonnaise
  • some finely chopped flat-leaf parsley
  • a baguette/bread roll

Optional accompaniments: salad ingredients of your choice


Mix the chicken, mayonnaise and chopped parsley together and serve in a baguette or bread roll and serve with a salad (shown here in a lightly buttered wholemeal baguette with iceberg lettuce and peppers and cherry tomatoes).

TIP: this is a very tasty use for leftover roast chicken or turkey.
