Serves 2 or 3. Preparation time 5 minutes. Cooking time 20-25 minutes.
- 500g fish fillet, such as pollock or haddock
- Extra virgin olive oil
- Salt and pepper
- 3 tbsp Bim’s Kitchen African Baobab & Moringa Dressing
- 250g package of mixed ready vegetables, such as carrots, cauliflower and broccoli
- 1/2 cup long grain rice
- 1 tbsp butter
- 2 tbsps Bim’s Kitchen African Baobab & Moringa Dressing
Preheat the oven to 210°C (190°C for fan-assisted ovens).
Place the fish fillet into a shallow baking dish. Drizzle some extra virgin olive oil over the fish, then gently rub the olive oil into the fillet. Season with salt and pepper. Add 3 tbsps Bim’s Kitchen African Baobab & Moringa Dressing and use the back of the spoon to spread it over the fish fillet until coated.
Place in oven, uncovered, and bake for 20-25 minutes until fish flakes easily with a fork and edges are brown.
While fish is baking, bring water to a boil in a medium pot. Add 1/2 cup of rice and stir. After 5 minutes, add the prepared vegetables and boil for another 5 or 6 minutes until the rice and vegetables are done (do not overcook).
Drain the rice and vegetables, then put back into the pot. Add 1 tsp butter and stir gently until butter is melted. Stir in 2 tbsps Bim’s Kitchen African Baobab & Moringa Dressing.
Put lid on the pot to keep the vegetable rice warm if fish is not ready yet.
Serve the fish and vegetable rice at the same time, while fish is still hot.
