The Artisan’s sweet & sour stir-fried rice

Serves 2. Preparation time 5 mins, cooking time about 7 mins



Heat the oil, ketchup, jam, water and salt over a gentle heat and continue cooking for about 2 mins until the mixture has thickened and is bubbling. Add the cooked meat, raise the heat and continuing to stir until meat is thoroughly coated and warmed through. Add the vegetables and continue stir frying for a further 40 secs. Add the rice and stir through. Continue stir-frying for a further 3 minutes. Serve while hot.
